The Butcher’s Cut – Bavette Steak – cut from the flank steak from the under-belly of the cow.  This popular bistro-style steak, called ‘Bavette D’aloyau’ in France, is a real all-rounder and equally delicious grilled, stir-fried or pan-fried. It is nicknamed the butcher’s cut as butchers used to save it for themselves.

The fan-shaped cut is part of the skirt and flank steak family and is packed full of beefy flavour. Perfect if you are looking for something on the lighter side of grilling.
