The oyster blade sits on the shoulder blade and when separated from the shoulder can be cut into steaks (part of the oyster blade is the flat-iron steak) for pan-frying or barbecuing. The steak has a thin line of tissue that runs through the centre of the steak, as this steak is a perfectly marbled Black Angus steak – it is not necessary to cut around the connective tissue.
