WHAT IS A TOMAHAWK PORK CHOP?

Tomahawk pork chops are pork chops with the bone still on! They are delicious and full of flavor. This is a cut that comes from the rib of the animal, or what is called the bone-in ribeye.

IS THE TOMAHAWK A GOOD CUT OF MEAT?

A highly marbled, exquisitely tender and flavorful steak, the tomahawk is primarily taken from the longissimus (Latin for “longest one”) dorsi, or loin, of the steer. This consists of two muscles outside of the steer’s rib cage that run along both sides of the spine.

HOW TO COOK A TOMAHAWK PORK CHOP?

  • Pork chops – I used bone-in tomahawk pork chop but regular pork chops will do as well
  • Salt & pepper – Season to taste.
  • Chilli powder
  • Onion powder
  • Sugar
  • Dijon Mustard

Method:

  1. Marinate: Combine all the seasoning ingredients together and generously rub over the pork chops on both sides. Refrigerate for a couple hours before cooking.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook for 4-6 minutes per side, or until well seared and with an internal temperature of 145F-150F.
  3. Let the pork chops rest for 5 minutes before slicing.
