The bone has been expertly removed for effortless carving, and the leg is rolled and tied to hold its shape during roasting.\u003c\/p\u003e\n\u003cp\u003eThis is the centrepiece roast: golden and crispy on the outside, pink and juicy within, with the sweet, clean flavour that South African free-range lamb is famous for. The deboned format means even cooking throughout and easy, clean slicing at the table. Pair with roast potatoes, seasonal vegetables and a good red wine.\u003c\/p\u003e\n\u003cp\u003eSeason generously with garlic, rosemary, thyme, olive oil, salt and pepper. Stud with garlic slivers for extra flavour penetration. Roast at 180°C for 25 minutes per 500g (medium), or 30 minutes per 500g for well-done. Rest for at least 20 minutes, loosely tented with foil.\u003c\/p\u003e\n\u003cp\u003eDelivered frozen. Defrost in the fridge for 36–48 hours (larger cuts need more time). Bring to room temperature 30–45 minutes before roasting.
