The fillet muscle is the most tender cut on the animal, and the grass-fed diet imparts a slightly more complex, mineral flavour compared to grain-fed alternatives.\u003c\/p\u003e\n\u003cp\u003eFor the perfect roast fillet: bring to room temperature, tie with butcher's twine for even shape, sear aggressively on all sides in a hot pan, then roast at 200°C for 20–25 minutes (medium-rare).
