Brined and lightly smoked, the gammon arrives ready to cook: simmer in stock or cola, then glaze and roast until golden, sticky and magnificent. This is the roast that fills the house with the most incredible aroma.\u003c\/p\u003e\n\u003cp\u003eGammon is cured pork (once cooked, it becomes ham) with a sweet, smoky flavour and a moist, tender texture that slices beautifully for a crowd. The exterior develops a gorgeous, caramelised crust when glazed with mustard, honey, brown sugar and cloves — the classic combination that never fails.\u003c\/p\u003e\n\u003cp\u003eSimmer the gammon in water or stock for 20 minutes per 500g, then drain. Score the fat in a diamond pattern, stud with cloves, brush with glaze and roast at 200°C for 20–30 minutes until golden and sticky.
