Pronounced boo-ruh-vors, this legendary sausage hails from South Africa and gets its name from the Afrikaans words for “farmer’s sausage.” Boerewors must contain at least 90% meat, according to South African government regulations.

It’s made from:

  • 90%+ beef (some recipes combine blend with pork or lamb - ours is all beef)
  • Natural spices like coriander, black pepper, nutmeg and cloves
  • Vinegar and salt as preservatives
  • Fat typically from the same animal (e.g., beef fat for beef boerewors). The fat content is important for flavor and moisture.

And crucially — no fillers or breadcrumbs allowed. Proper boerewors is all meat, all flavour, all the time.

Unlike the classic English sausage link, boerewors is usually coiled into a spiral and sold by the weight. It’s designed for grilling over open flames, not simmering or stewing.

In the Oven:

  • 180°C for 25–30 minutes, flipped halfway through
