Oxtail is the original comfort food — thick, meaty sections of tail bone surrounded by rich, gelatinous connective tissue that melts into silky, unctuous sauce when braised low and slow. Our Beef Oxtail is sourced from grass-fed cattle and cut into generous cross-sections for even cooking.
The magic of oxtail is in the collagen: hours of gentle cooking transform tough connective tissue into a naturally thick, glossy sauce that clings to every piece of meat. The flavour is deeply beefy and concentrated, with a richness that few other cuts can match. Oxtail is a staple of South African, Korean, Jamaican and Italian cooking traditions.
Brown the oxtail pieces well on all sides, then braise with onions, carrots, celery, red wine and stock at 150°C for 3–4 hours until the meat falls from the bone. Season with fresh thyme and bay leaves. The sauce should be glossy and thick without any added thickener.
Delivered frozen. Defrost in the fridge for 24 hours. Oxtail improves with reheating — make it the day before for the best results. Refrigerate overnight and skim the solidified fat before gently reheating. Serve over mash, polenta or with crusty bread.
